Abstract

Diare is a potential and epidemic disease of the digestive system. One way to reduce the occurrence of diarrhea cases is to wash and store cutlery properly. Washing cutlery after use still allows the content of bacteria such as Escherichia coli. The presence of bacteria on cutlery is not in accordance with the Decree of the Minister of Health of the Republic of Indonesia Number 1098/Menkes/SK/VII/2003 because tableware that is in direct contact with food that is ready to be served the number of germs should not exceed 100/cm2 surface of cutlery, while for Escherichia coli bacteria must be 0 germs/cm2 surface of cutlery. This study aimed to determine the decrease in total bacteria on cutlery after washing with dishwashing soap coupled with  1000 mg/lt, 2000 mg/lt, 3000 mg/lt, and 4000 mg/lt ethanol extract Mirabilis Jalapa. The research method used is Pretest – Postest Design. In the results of research with paired Uji T,  obtained p value = 0.001, at α = 5%, there was a significant difference between the decrease in the total number of bacteria on cutlery before and after washing with Mirabilis Jalapa soap with variations in concentrations of 1000 ppm,  2000 ppm, 3000 ppm, and 4000 ppm. From the study results, it can be concluded that there was a  decrease in the number of bacteria on the cutlery after washing using soap plus Mirabilis Jalapa extract  2000 ppm, with an average decrease of 99.9%.
